The architectural greenish-white flower heads contrast well with the purple-tinged stems which can grow up to 180cm tall. The flowers are held in an umbel from June to August above large pinnate leaves. All parts of this plant have culinary or medicinal uses, but it is best known for its candied stems which are often used as cake decorations.
